not-so-crunchy granola // a recipe

I'll never forget the first time I heard someone describe another person as "granola crunchy" in college. Being from the midwest, it took me a moment. I'm dedicating this uber easy & super yummy recipe to that moment.

Step 1: Gather your ingredients. Feel free to add or subtract whatever you like. I usually improvise my dry ingredients, depending on what is in my pantry at the time.

1 1/2 cups Instant Rolled Oats
1/2 cup Currants (get creative here, add whatever dried fruit you have on hand or prefer)
1 teaspoon Cinnamon
1/2 cup Organic Almonds
1 teaspoon Cacao Powder
1/4 cup Organic Unsweetened Coconut
1 cup Organic Peanut Butter (for the love of the earth & forests PLEASE never buy peanut butter with palm oil)
1 tablespoon Local Honey or Agave Nectar

Step 2: Mix your dry ingredients together. Feel free to add chia seeds, flax seeds, hemp seeds, anything yummy!

Step 3: Add in the wet ingredients (honey & peanut butter). You could always use cashew or almond but as a peanut alternative. This part requires patience. Slowly fold the oats into the honey & peanut butter until everything is mixed together nicely. If the mix seems too dry you can always add more honey or peanut butter.

Step 4: Enjoy in your tum knowing you're eating something nurturing for your body! I love to eat this granola with blueberries and sometimes greek yogurt.
